Aperitif wines
Here is a selection of wines that I feel have an interesting talking point to whet a persons appetite before dining.
The Aligote is incredibly dry and works the tastebuds almost like a fino sherry.It is a supberb aperitif on it’s own merits and needs no cassis to help it down!
The Edelzwicker carries all the great qualities of the Alsace varietals in one glass and is the perfect start to an evening.
The Rose Passerille (Cabernet Franc & Sauvignon) I think is great as an aperitif served over ice or very chilled. It is similar in style to a Lillet rouge but with much more complexity and fruit. Bon Appetit!

Bone dry and with great acidity, this really gets the juices going. With a lot of Aligote the tendancy is to add Cassis, this one does not need it and it would mar the great personality it has of it's own.
It reminds me of drinking dry sherry, not because it is oxidised but because of its acidity minerality, salty twang and oily texture. Great with goats cheese or a cheeky bit of Lardo and cobnuts
